As a self-proclaimed deal diva I was discouraged that I couldn’t find organic yogurt drops at a decent price. Even the ones I buy my bunnies (actual bunnies) are expensive at $3 a bag, considering how fast they eat them. So a mission was born: time to create a delicious yogurt drop snack at a delicious price.
When formulating this recipe I kept a couple things in mind-
-These are for my little girls, so no added sugar is ideal.
-They need to be healthy, try to get some nutrients and fiber in there.
– And my little peanuts are napping so I only have about 20 minutes to make them!
You know what they say pressure makes diamonds- and this recipe is a gem! I took full advantage of those precious minutes and threw together a few healthy ingredients and concocted these little melt in your mouth drops.
I would guess that this recipe cost me roughly $4 to make and I produced about 500 drops. I would guess my batch made the equivalent of 5+ bags worth of the commercial yogurt drops but without the preservatives and the cost. That’s a considerable savings! Now if only I can just get my husband to stop eating them!
Organic ingredients:
1 tsp elderberry syrup
2/3 cup coconut / cashew milk
7 tbsp (one packet) creamed coconut
3 egg whites
1/4 tsp cream of tartar
1/2 tsp citric acid
Combine ingredients in food processor and mix on high for 2 minutes until all chunks are broken down and mix is blended well.

Use a rubber spatula to move the batter into a pastry bag or zip-able bag and cut the corner to create a small opening.
Squeeze the batter onto a baking sheet lined with parchment or wax paper. Make the dots tiny (dime sized) so they are easy for little fingers to grab.

**Tip** To make parchment or wax paper stick to the pan, spray the pan with non-stick spray before laying the paper down.
Bake at 375 for 8-10 minutes. Allow to cool for 2 minutes before eating. And try to save some for the kiddos or just make a double batch.
