Here’s my favorite thing to do with all that delicious garlic, I showed you how to peel in a previous post, I make sheet pan roasted chicken with garlic and veggies. This is very similar in flavor to a popular urban legend recipe called, “Engagement Chicken,” where a cook makes this meal for their love and while eating this the partner decides, I need to lock this person down!
Romance Chicken- Sheet Pan Chicken and Roasted Root Veggies
Place about a cup of each vegetable on a parchment or foil lined sheet pan,
- potatoes cut into wedges
- onions cut into wedges
- carrots cut into small chunks (or baby carrots)
- one or two heads of garlic – depending on your taste for garlic – I LOVE GARLIC!
The chicken juices make the veggies delicious with tons of caramelized flavor.
Toss veggies in roughly 3 tablespoons of olive oil. I use my misto to spray the oil on and use less oil. You want the veggies to be in a single layer so they roast evenly. Nestle into the veggies 4 bone in, skin-on chicken breasts. I cut the breasts in half if they are large. I cook the chicken with the skin on so it stays moist, it can be removed after cooking if skinless is preferred. Lightly drizzle chicken with olive oil. Sprinkle salt and pepper generously and roast in oven set at 425 for 45 minutes to an hour depending on chicken size.
The veggies caramelize and are infused with the delicious juices from the chicken..and the garlic! So delicious, a super easy and very adaptable meal for different sized families.
