PB&J Dessert Cream Parfait– an easy sweet treat

This is a mix of my favorite things-it’s like a whipped cream peanut butter & jam sandwich.  This is pretty low in carb and can be made in a variety of ways. This would also be a healthy dessert you can make ahead of time.  And bonus: the kids will love to help making this and help eating it! Mom win!

Use what you have/what you love! You can substitute your favorite type of nut or have you around the house for the almonds. If you don’t have frozen berries you could substitute jelly or fresh fruit puree.  If you are doing low carb/ low sugar you could substitute stevia or monk fruit for sugar. You can even add in a vanilla yogurt layer or add in extras like chocolate chips or homemade nutella.

Organic Ingredients:

2/3 cup almonds

1 cup frozen berries (I did half raspberry and half blueberry)l love to

1 tbsp butter

5 tbsp sugar, heaping ( or sweeten with stevia to your taste)

1/2 cup heavy whipping cream

1 tbsp powdered peanut butter

1 tsp vanilla extract


Using your food processor, grind all of the almonds to a crumb consistency and set aside.


In a small frying pan melt butter and cook down the berries over medium heat.


Once the berries appear to be liquifying add half of the sugar and stir.


When the sugar has dissolved remove pan from stove and quickly shill in an ice bath. To do this I fill a colander with ice.To prepare whipped cream layer, combine heavy cream, peanut butter powder, vanilla extract, and  other half of the sugar (or stevia) and whip with a hand mixer until stiff like a mousse.


Layer the ingredients in whatever order you choose to serve them in: crushed almond powder, whipped cream, berries, repeat. Top it off decoratively if you’d like. Chill in the refrigerator prior to serving.
