My favorite candy bar of all time is the almond joy. The cocouttyness is out of control! I wanted to take a stab at making a homemade healthier version of the classic concotion. Make this for those you love, show your sweethearts how sweet you think they are!
Chocolate Recipe
6tbsp chocolate powder
6tbsp coconut oil
2.5 tbsp honey
1/2 tsp vanilla extract
Coconut Filling
2 tbsp coconut oil
2 tbsp shredded coconut flakes
2 tsp. tbsp raw cane sugar
2 tbsp creamed coconut
(Also coconut manna or coconut butter works)
First mix the chocolate ingredients together on a double boiler. When we’ll incorporated, pore enough chocolate to fill a 1/2 inch layer at bottom of a lined mini muffin tray or unlinedsilicone tray to make bite sized candies. Reserve half of chocolate to coat filling.
When chocolate hardens layer coconut filling into middle, use about a tsp in each, add an almond on top, then pour chocolate to coat the coconut/almond center and freeze to set up.
These are amazeballs. I store mine in the fridge or you can freeze them and they’ll stay good for awhile.
